Why Moisture Percentage Alone Fails to Prevent Sea-Freight Mold and Enzymatic Degradation
In green coffee trading, traditional moisture meters calculate the total mass percentage of water (H₂O) inside the bean. However, Moisture Content (MC) does not distinguish between bound water and free water available for biological reactions.
Water Activity (Aw) measures the chemical potential of unbound water vapor pressure in equilibrium with the coffee matrix (Aw = p / p₀). When Aw exceeds 0.65 Aw at ambient storage temperatures (25°C):
- Xerophilic Molds & Ochratoxin A (OTA): Aspergillus and Penicillium fungi proliferate rapidly above 0.65 Aw, leading to container shipment rejections.
- Enzymatic Browning & Lipid Oxidation: Free water mobilizes soluble sugars and lipids, degrading cup score (fade/woody notes) during sea-freight transport.
- Container Sweat & Condensation: Temperature shifts during trans-oceanic transit cause vapor pressure shifts, converting safe moisture levels into localized high-Aw condensation zones.
